Classic Okroshka with Sour Cream and Water

One of the most delicious ways to make okroshka—a tasty, light summer dish! This wonderfully refreshing summer soup is incredibly easy to put together, and it comes together a lot like making an Olivier salad.

    Step 13:

  • So let's get started: dice the boiled potatoes, eggs, radishes, cucumbers, and herbs. Simple? You bet! Next, put the prepped ingredients in a pot that's easy to stir in, add the sour cream and mayonnaise in a 1:1 ratio so all the ingredients "float" in the sour cream-and-mayo mixture, and pour in the water. Add as much water as you like (depending on how thick or thin you prefer your okroshka). One thing I'll point out: chill the water for the okroshka ahead of time so it's ice-cold—it makes a real difference to the flavor. To serve, ladle the okroshka into bowls and offer it with bread and mustard.
