Potato Gnocchi with Chicken
Tasty, simple, and quick—a nice alternative to mashed potatoes. Gnocchi is an Italian dish, like little dumplings, except they're made from potato rather than ordinary dough. Gnocchi are so easy to make that even a kid can manage it.

Step 1:
Scrub the potatoes well and boil them in salted water until tender. Once they're done, peel the boiled potatoes and grate them on the fine holes. Rinse the chicken fillet well under running water and boil it, then finely chop the cooked chicken.

Combine the finely grated potatoes and finely chopped chicken. Add the 2 eggs, 150 g of sifted flour, nutmeg, and salt to taste. Mix everything together well.

Step 3:
Turn the mixture out onto a floured surface and divide it into a few portions so the dough is easier to handle. Roll each portion into a rope and cut it into small pieces. Roll each piece into a ball and press a dimple into the middle with your finger, dipping your finger in flour each time so the dough doesn't stick.

Step 4:
Cook the gnocchi in boiling salted water with a splash of vegetable oil so they don't stick together. Cook for 1.5-2 minutes, until they float to the surface. Leave the cooked gnocchi uncovered on a plate so they dry off a bit—that makes them easier to fry without falling apart.

Once cooked, fry the gnocchi in a preheated skillet with vegetable oil until golden brown on both sides. Add a little butter as they fry (it gives a nutty flavor). Important: don't flip the gnocchi right away—let them brown a little first, or they'll fall apart.

Once fried, the gnocchi are ready. Serve them hot. Feel free to swap the chicken for any other meat you like, or for sautéed mushrooms. Instead of cheese, you could simply top them with fried onions. I hope you enjoy them. Enjoy!
