- Put the dried lemongrass in a tea filter bag so you won't have to fish little pieces out of the soup later. If you're using fresh lemongrass, just chop it coarsely. Slice the galangal root too. Cut the chicken breast into large cubes. Coarsely chop the onion. Cut the mushrooms into cubes. Halve the cherry tomatoes—if you're using a regular tomato, peel it and chop it coarsely. Finely mince the chili (I also sliced some for serving). If you don't want a spicy soup, leave the chili out entirely. Pour half a can of coconut milk into a pot and bring it to a boil. Add the Tom Kha paste and stir until fully dissolved. Add the chicken, cover, and cook over medium heat for 5 minutes. Add the remaining coconut milk and pour in the water. Add the lemongrass, galangal, lime leaves, mushrooms, onion, tomatoes, and chili, and squeeze in the juice of half a lemon. Stir, cover, and cook for 10 minutes. To serve, sprinkle with cilantro and add more chili if you like. Tom Kha Gai is a Thai coconut chicken soup—one of the most popular, alongside Tom Yum. It has a sweet-sour-spicy flavor. The dish gets its name from galangal (Thai ginger): "tom" means "to boil," so it roughly translates to "boiled galangal."
