Cooking method
Put the dried lemongrass in a filter bag for brewing tea so that you don't have to mess around and pull out small pieces from the soup.
If you use fresh lemongrass, then just chop it coarsely. Also chop the galangal root.
Cut the chicken breast into large cubes. Chop the onion coarsely. Cut the champignons into cubes.
Cherry tomatoes cut in half. If you use a regular tomato, then remove the skin from it and chop it coarsely.
Finely chop chili pepper.I also cut the pepper into slices for serving. If you don't want a spicy soup, then don't add pepper at all.
Pour half a can of coconut milk into a saucepan and bring to a boil.
Add the tom kha paste and mix until completely dissolved.
Put the chicken in a saucepan.
Cover with a lid and cook over medium heat for 5 minutes.
Add the remaining coconut milk and pour in the water.
Add lemongrass, galangal root, lime leaves, mushrooms, onion, tomatoes and chili pepper, squeeze the juice from half a lemon
Mix, cover and cook for 10 minutes
When serving, sprinkle with coriander, add chili pepper if desired.
Tom Kha Kai is the name of Thai coconut milk soup with chicken. It is one of the most common soups, along with Tom yam soup. The taste of the soup is sweet-sour-spicy.
The dish got its name from galangan – Thai ginger. "Tom" means "to cook", which in literal translation can be understood as boiled ginger. For the sharpness, without which it is impossible to imagine a dish, chefs use chili pepper, and for the spicy aroma and sharp taste – cilantro.
