"Perfect" Hearty Salad with Pickled Onion
Our family loves it, and I hope you will too. It's just a really tasty, filling, quick little salad—only 3 main ingredients, plus a bit of pickled onion for a zesty kick. It seems to come together from the most ordinary ingredients, but the combination is so good.
Cooking method
-
Step 1:
4 medium boiled potatoes. For the meat, you can use cured pork loin or ham. And pickled cucumbers and onion.
-
Step 2:
Start by pickling the onion, since it needs time to marinate. Thinly slice half an onion—that's plenty for one batch of salad.
-
Step 3:
Pour the marinade over it (water + vinegar + salt + sugar, all stirred together). I usually make the marinade by eye, but this time I measured everything. It should taste bold but balanced. Let it sit for 20-30 minutes—since the onion is thinly sliced, that's enough time to marinate.
-
Step 4:
Peel the potatoes and cut them into large cubes. I actually like everything cut big in this salad—and it saves time too!
-
Step 5:
Cut the ham into thick strips...
-
Step 6:
Cut the pickles into thick rounds...
-
Step 7:
Add the onion, season with salt and pepper, and dress with mayonnaise. Mix everything together well.
-
Step 8:
And the salad is ready!
-
Step 9:
Filling potatoes, savory ham, crunchy pickles, and zesty pickled onion. The ingredient list seems ordinary, but the combination is so tasty. This salad works great for a holiday table or any day. It's a regular at ours.
-
Step 10:
Our family loves it, and I hope you will too. Give it a try!
- This salad is a little like Olivier, but it has its own special, distinctive flavor. Of course, you can adjust the amounts by eye or to your own taste—I usually do. This appetizer takes very little time, especially if you have the potatoes already boiled, and you end up with a whole plateful of delicious, hearty, savory salad. And how could it not be tasty? The potatoes are good, the ham is good, the pickles and onion are good too. My mom shared this recipe with me, and now I'm passing it on to you. I hope it becomes a regular at your table.
