- This beef and pork soup is a well-known dish in Abkhaz cooking. People love it not just for its great flavor but because it's so nourishing.
- Start by filling a pot with water and setting it over the heat. Rinse the marrow bone well and add it to the pot. Cover and bring to a boil, then simmer over low heat for 1.5–2 hours, skimming off the foam as it forms.
- Once the bone has simmered for 1.5–2 hours, add the meat: rinse the pork and beef well, cut them into cubes, and add them to the broth. Simmer for 10–15 minutes, then season with salt.
- Rinse the rice and add it to the pot, along with the chili pepper, tomato paste, peppercorns, and bay leaf.
- Peel and finely chop the onion. Add it to the pot and bring back to a gentle boil. Lower the heat and simmer until the rice is cooked through.
- Peel and mince the garlic, stir it into the broth, and take the pot off the heat. Total cooking time for this soup is about 3 hours.
