Spicy Marinated Squid (Beer Snack)
These little squid rings disappear like popcorn. They're a favorite snack to go with beer, and the appeal is obvious: quick to make, low in calories, completely natural, and seriously tasty. Tender but fiery—impossible to stop eating.

Step 1:
Thaw the squid, already cleaned of the insides and skin.

Remove any leftover clear "quill" (cartilage) if present, then cut the bodies into rings about a centimeter wide.

Bring water to a boil in a pot—don't salt it. Drop in the squid rings and cook for exactly one minute once it returns to a boil. Tip: cook the squid right in a metal colander, so you can lift them out instantly to avoid overcooking and drain them easily.

Step 4:
Make the marinade. Pour the soy sauce into a separate bowl. Wash a chili pepper, remove the seeds, slice a few rings, and add them to the bowl.

Add a tablespoon of Worcestershire sauce and stir the marinade together.

Add the marinade to the squid, toss thoroughly, and let them marinate for up to fifteen minutes—then they're ready to serve. I used a vacuum sealer to speed up the marinating, which took just seven minutes.
- If you don't have a fresh chili on hand, any hot sauce you like works just as well—sriracha, salsa, or a simple chili-based hot sauce. Big cilantro fan that I am, I always sprinkle my serving with the finely chopped herb. I usually serve the squid in individual portions so everyone gets their fair share; they're easy to eat off a skewer with a cold beer. If you're not a beer drinker, make these anyway and use them as a salad base—toss the squid with cherry tomatoes, arugula, cilantro, and salted peanuts, and dress with olive oil. It's a knockout! Keep the squid in the fridge, but only until your guests arrive—I wouldn't store them longer, since they're best fresh, so make a modest batch at a time. Enjoy!
