Tomatoes with Bird Cherry and Vinegar for Winter (No Sterilizing)

Putting up tomatoes with no fuss and no sterilizing! A great canning method that gives you delicious, sweet tomatoes with a hint of bird cherry — a taste of sunny summer in the dead of winter!

    For the tastiest tomatoes, choose firm fruit of roughly the same size and wash them very well.

    Prick each tomato near the stem end so they stay whole during cooking.

    Strip the leaves off the bird cherry twigs — they'll flavor the marinade.

    Pack 2.5 kg of tomatoes into jars. Measure the boiling water with a 1-liter measuring cup: pour 1 liter into the 2-liter jar and half a liter into the 1-liter jar, then let the warmed tomatoes sit for about 20 minutes.

    Put two bird cherry twigs in a pot and add 5 tablespoons of sugar per liter of water, plus 2.5 tablespoons for the half-liter — for the 1.5 liters of water total.

    Add 1.5 tablespoons of salt to the pot, set it on the stove, and bring it to a boil.

    Drain the water from the cooled jars of tomatoes, using a special draining lid.

    Stir everything in the pot and boil for 2 minutes — and the marinade for the tomatoes is ready.

    Pour the hot marinade over the jars of tomatoes and add a bird cherry twig to each.

    Add 1 teaspoon of vinegar essence to the 2-liter jar and half a teaspoon to the 1-liter jar.

    Seal the jars tightly with lids.

    Turn the jars upside down to check the seal, then cover them with a blanket and leave them to cool for several hours. Store these no-sterilize homemade tomatoes in a cool, dry place. Enjoy!

  • Tomatoes for winter, no sterilizing! A good party table is hard to imagine without an assortment of appetizers — salted and pickled cucumbers, canned salads, vegetable spreads, all finger-licking good. But nothing replaces tomatoes.
