  • First, prep your ingredients: peel a small onion and chop it finely — cut it in half first, then mince each half; peel the garlic and mince it finely with a knife; rinse the parsley, blot off the excess moisture with paper towels, and chop it finely; the mussels should be thawed ahead of time (just move them from the freezer to another part of the refrigerator at least a few hours before cooking, ideally overnight), then rinse them and let the water drain; wash the tomatoes, cut out the stem ends, and dice them small. Now you're ready to cook! Heat the olive oil in a large heavy-bottomed pot over medium heat. While it warms, combine the chopped onion, garlic, and chili flakes in a bowl, stir, then add it all to the pot. Cook, stirring, for 30 seconds. Pour in the wine and stir again, warming everything for another minute. Next add the broth (chicken or fish, or simply clean drinking water), along with the tomato juice and the diced tomatoes. Stir in half the chopped parsley. Mix well and turn the heat up to high. Bring it to a boil, salting and tasting as you go. Once it boils, add the mussels. Cook everything together over medium heat for 5–6 minutes, then take the pot off the heat. The soup is ready! Ladle it into bowls, garnish with the remaining chopped parsley, and call everyone over to try this original dish — not just a dish, but a real culinary masterpiece.
