  • Cooking frozen mussels isn't hard at all. These days you can find this delicacy at any large grocery store, sold both in the shell and shelled. This recipe walks through cooking mussels in the shell — served that way, they look really striking and never fail to impress guests. Just the thing for a holiday dinner! First, thaw the mussels, but do it the right way: don't leave frozen mussels to defrost at room temperature. It's best to move them from the freezer to another shelf of the refrigerator, which thaws them gradually. That preserves both the mussels' nutrients and the seafood's great flavor. They'll take 6–8 hours to thaw — you can leave them a couple of hours longer. After that, rinse the mussels under cold running water. If you do want to thaw them at room temperature, it's best to put them in salted water so they're fully submerged, and leave the clams there until completely thawed. Transfer the thawed mussels to a large pot and add clean filtered water, fully covering the seafood. Set the pot over high heat and bring to a boil. Drain off the water, rinse the mussels, then cover them with fresh clean water. Return to high heat and bring to a boil, then lower the heat and cook the mussels for 10 minutes, salting the water to taste. Lift the cooked mussels out of the broth and serve them right away on plates. Be sure to serve them with lemon wedges, and garnish with fresh herbs if you like.
