Honeyberry and Strawberry Jam

Make a deliciously fragrant jam from the season's first berries! This honeyberry (honeysuckle) and strawberry jam turns out wonderfully aromatic and tasty. Serve it as a treat with herbal tea, use it in baking, or spoon it over cheese desserts, oatmeal, and casseroles.

  • To make this wonderfully delicious jam, start by sorting through the berries. They don't all have to be pretty and whole since they'll be puréed, but there shouldn't be any spoiled spots — trim those away as needed. Rinse the sorted berries in a colander and spread them on a clean, dry towel, blotting the tops gently with paper towels. Let them dry out a bit. Pull the hulls off the strawberries. Then purée the dried berries in a meat grinder or blender. Transfer the berry mixture to an enameled pot. Add the sugar to the fragrant purée, stir, cover the pot, and let it stand for 24 hours, so all the sugar crystals dissolve; stir the mixture from time to time. When the time is up, set the pot over low heat and bring it to a boil. Once it boils, cook for 5 minutes, stirring the fragrant contents now and then. Take the pot off the heat and let the jam cool for about 10–15 minutes. Meanwhile, sterilize your jars (small ones work best) and lids however you like — the microwave is quick and handy. It's best to boil the lids for a few minutes.
  • Ladle the jam into clean jars, working very carefully (a ladle and a slow hand keep the jars from cracking), and seal with sterilized lids. Turn the jars upside down, wrap them in a blanket, and leave them for a day. When the time is up, move the jam to its permanent storage spot — somewhere cool. All done! Happy canning!
