Cherry Plum Compote (One-Quart Jar) for Winter

    1. For a flavorful, full-bodied compote, start by sorting through all the cherry plums. Set aside any bruised or overripe fruit for jam — for compote you want the firm, fleshy ones. Rinse them well under running water to wash off any dirt and dust, then drain them in a colander to get rid of the excess water. 2. While the cherry plums dry, get your jars ready. Wash the glass jars well with baking soda and rinse them in hot water. Set the oven to 210–250°F (100–120°C), place the jars upside down on a baking sheet, and sterilize them. To keep the jars from cracking, put them into a cold oven first and then bring it up to temperature, so they heat gradually and are far less likely to break. Drop the lids into a small saucepan, cover with water, and boil for 5 minutes. 3. Once the jars are ready, you can pack the fruit. Put the washed, dried cherry plums into a clean jar — don't crush them; they should sit loosely, leaving room for the syrup. Pour the sugar right over the plums in the jar. Rinse the mint sprigs, dry them, and tuck them in with the fruit for aroma. 4. Bring fresh water to a boil and immediately pour it over the cherry plums and sugar in the jar. Seal with the clean lids. 5. Turn the sealed jars upside down on a sturdy surface and leave them, keeping an eye on them, until completely cool. After that, move them to a dark, cool place where they'll keep for up to a year. Happy canning!
