Krill Meat and Rice Salad

A must-make for seafood lovers! Krill are tiny Arctic shrimp, and they make for some genuinely interesting dishes. I'd heard about krill meat for ages, but only recently picked some up and cooked with it for the first time — and I'll definitely be making it again.

    Cook the rice until tender in salted water, then drain it in a sieve and let it cool. Drain the krill and mash the meat with a fork.

    Wash the apple, peel it, core it, and cut it into small dice.

    Wash the cucumber, pat it dry, and dice it.

    Hard-boil the eggs, then drain, cool, and peel them. Cut them into small dice. Add the krill meat, rice, eggs, cucumber, and apple to a salad bowl.

    Season the salad with salt and pepper, then dress it with the mayonnaise.
