Goulash soup with beef and vegetables

Delicious traditional Hungarian first course. Hungarian goulash soup is a thick spicy soup with large pieces of meat and potatoes. In Hungarian, the name of this dish sounds like "bograch guiyash". Bograch is a cauldron with a handle, and "guiyash" is translated as a shepherd. The story goes that Hungarian soup has a very ancient tradition of cooking, it was invented by the people of nomadic tribes. Of course, at present the recipe is adapted by housewives to modern conditions. However, the dishes of Hungarian cuisine are distinguished by the use of a huge variety of seasonings and spices in the preparation.

    In Hungary, modern goulash soup, like many other dishes in other countries, has several cooking recipes. However, the main ingredients such as meat, potatoes, onions, tomatoes, paprika are all the same. Paprika – this dried powder of sweet pepper is the main ingredient of this dish. It gives the taste a unique taste and bright color. Any meat can be used, but more often such beef soup is cooked.

    Peel and finely chop the onion with a knife. Garlic is cleaned and finely chopped with a knife. A huge number of different herbs and spices are added to the traditional Hungarian dish, for example, coriander, cumin, thyme, cumin, rosemary, basil, hot pepper and others. Of course, you need to add them taking into account your taste preferences.

    Some housewives add dumplings from dough to it for the thickness of the dish, but this is an optional ingredient of Hungarian goulash soup. Heat vegetable oil in a frying pan, you can use pork fat, put onions on it. Fry the onion until transparent.

    Then put the meat to the onion in the pan, you can add bay leaf and pepper peas.

    Fry the meat until lightly browned, pour in a glass of water. Reduce the heat to medium and simmer on medium heat under the lid for about 30 minutes, stirring occasionally.

    Then we put the meat in a saucepan, pour the broth from the pan into the pan, put the cooked potatoes, carrots and tomatoes there. Pour a small amount of water so that it covers the contents of the pan for a couple of centimeters. Add spices to taste, bring to a boil and cook over medium heat for about 30 minutes.
