Squid Salad with Apple and Eggs

Quick to make, and the result is a tasty salad with just a touch of mayonnaise. Squid is filling yet light, and eggs pair beautifully with it. Put those two together in a salad and a delicate flavor is guaranteed.

    Cut the hard-boiled eggs into strips.

    Peel the onion and cut it into small cubes. Cover with boiling water and let it stand for 10–15 minutes (this mellows the raw bite).

    Pour boiling water over the squid to loosen the skin, then transfer it to a bowl of cold water.

    Peel off the skin and pull out the clear quill with your hands. Rinse under cold water.

    Cut the squid into strips and put it in a saucepan.

    Cover with water and bring to a boil. Add 1 tbsp vinegar, stir, and cook for 2–3 minutes.

    Put all the ingredients in a bowl, season with salt and pepper, and toss with the mayonnaise. Grate a quarter of a juicy green apple on the coarse holes of a grater and fold it in. The salad is ready — enjoy!
