And pies made with dried fruit really do turn out wonderfully tasty. This recipe walks you through making a filling from dried apples, and it couldn't be simpler. A meat grinder is the best tool for grinding the apples — a hand-crank or electric one both work, though the electric one goes much faster. Skip the blender; it won't give the apple mass the right texture. 1. Put the dried apples in a deep bowl and cover with cold water. Wash them well, then drain — washing dried fruit is a must. 2. Transfer the clean apples to a saucepan and cover with fresh cold water; the water should fully cover the fruit. 3. Set the pan over the heat. Once the water is warm, add the sugar, then bring it up to a boil. 4. Cook for 5 minutes from the time it boils — no longer, since you don't want the apples to fall apart. 5. Drain off all the liquid; you can save it for other recipes or drink it as compote. 6. Let the apples cool a little, then run them through the meat grinder. That's it — your pie filling is ready to go!
