Instant Noodles with Shrimp

  • Shrimp dishes are always a winning, original choice. Shrimp are a valuable source of calcium and animal protein, and they're low in calories, so they fit nicely into the diet of anyone watching their figure. You can pick up mushrooms at any supermarket — they're available year-round. Button mushrooms are a good option: they cook fast and taste great. Either meat or vegetable broth works, and chicken broth is delicious too. You can make broth specifically for this dish or use what you already have on hand; if you'd rather, you can even swap in plain water. 1. Pour the broth into a heavy-bottomed pot and set it over the heat. 2. Meanwhile, prep the mushrooms: clean, wash, and cut them into pieces. 3. Clean the shrimp too — remove the heads and legs and peel off the shells. 4. Wash the green onion and cilantro and chop them with a knife. 5. Add the mushrooms to the boiling broth and cook for 5 minutes. Then add the shrimp and green onion and season with salt. 6. Cook for about two minutes, until the shrimp turn pink, then take the pot off the heat. 7. Put the instant noodles in a bowl, cover with boiling water, put a lid on, and let them sit for 2 minutes. 8. Ladle the broth with the mushrooms and shrimp into serving bowls. Add noodles to each bowl and sprinkle with chopped cilantro. Serve right away. A little tomato sauce is a tasty addition, but that's optional. Enjoy!
