Hot Belgian Chocolate
A warming, cozy, traditional drink — and seriously chocolaty! Hot Belgian chocolate is the perfect treat for a cold day. You don't have to save it for winter, either; there are plenty of summer days when you just want something warm and comforting. It's wonderfully fragrant, intensely chocolaty, sweet, thick, and rich — pure pleasure in a mug. It's lovely to serve at family gatherings or when friends drop by. Kids will adore it too — just leave out the brandy in that case.

- Some days you're just not in the mood, or it's cold and gray outside — and that can happen any time of year. But there's a remedy for the blues: a hot chocolate drink made the traditional way. Use good-quality Belgian chocolate for the best results. 1. Start by finely chopping the dark and milk chocolate; a medium or coarse grater works great here. Combine the chocolate shavings. You can also use only dark or only milk chocolate — it's a matter of taste. Kids usually prefer milk chocolate, since it's sweeter and has no bitter edge. 2. Pour the milk into a medium saucepan. Any milk works, whether low-fat or full-fat — higher-fat milk makes the drink tastier and thicker, but also richer in calories. Use a heavy-bottomed pan. Set it over medium heat and bring to a boil, stirring, then take it off the heat. 3. Add the chocolate shavings to the hot milk and blend with an immersion blender until the chocolate is fully melted. The milk-and-chocolate mixture should turn nice and frothy. 4. If you're using brandy, pour it in now and blend for another 30 seconds. 5. In a separate bowl, whip the cream with the powdered sugar, starting on low speed and gradually increasing it. Whip until light and fluffy. 6. Pour the hot chocolate into pretty mugs — ceramic is best, since it looks cozy and just right for a warming drink like this. 7. Top each serving with the whipped cream, dividing it evenly among the mugs. Don't dawdle — serve the hot chocolate right away. Enjoy every delicious sip! :)
