- Peel the potatoes, cut them into large pieces, and put them on to boil. While the potatoes cook, make the dumpling dough: crack the egg into the flour and gradually mix in the water. Knead until the dough is smooth. Wait until the potatoes are tender, then divide the dough into ropes and cut pieces directly into the pot with the potatoes. Once all the dumplings float to the surface, cook for 4–5 minutes. Drain the potatoes and dumplings in a colander. Fry the onion in butter or ghee and add it to the dish! Serve sour cream on the side if you like. These potato dumplings work as a dish on their own or as a side for meat or poultry. Your Kartoffelkleis is ready!
