  • How to make this cold beet soup (Rotriewesuppe): Cut the beets into matchsticks and add them to a pot of boiling water. Stir in the sugar and vinegar. Be sure to add ground hot pepper — it gives the soup a special zing and that signature spicy edge. If you like, you can also add cloves, cardamom, or cinnamon; the main thing is not to be afraid to experiment. Stir everything well and let it cool. Serve the beet soup cold or chilled.
