Pasta with Escarole

A wonderful way to make pasta — give it a try! Pasta with escarole makes a great dinner for the whole family. It's not hard to put together, and if you don't have chicken sausages, you can use chicken sausage links or any other sausage you like.

    1. Cook the pasta according to the package directions, then drain. 2. Peel the onion and garlic; dice the onion and press the garlic through a garlic press. 3. Pour the olive oil into a heavy-bottomed pot and set it over the heat. Sauté the onion until soft and translucent, about 5 minutes, then add the garlic and cook for another minute. 4. Peel the sausages, cut them into small pieces, add them to the pot, and cook for about 4 minutes. 5. Dice the escarole and add it after the sausages; cook for 3–4 minutes, then add the canned beans, pour in the chicken broth, and simmer for 10 minutes. 6. Toss the cooked pasta with the rest of the ingredients, season with freshly ground pepper and crushed sage, and salt to taste. Sprinkle each serving with grated Parmesan before serving. Enjoy!
