Pasta with Radicchio and Tomatoes

- Wash the tomatoes, cut the radicchio into strips, peel the garlic, and halve each clove. Put everything in a baking dish, drizzle with the olive oil and balsamic vinegar, and season with salt and pepper to taste. Roast in an oven preheated to 375°F (190°C) for 30–35 minutes. 2. Meanwhile, cook the pasta in salted water according to the package directions. Drain it in a colander, let the liquid run off, then return it to the pot, add the roasted vegetables, pour over the juices released during roasting, and toss. 3. Grate the Parmesan. Plate the pasta in portions, sprinkle with Parmesan and finely chopped herbs, and serve. Enjoy!
