Chicken Feet and Beef Aspic (Kholodets)
A thrifty and incredibly tasty recipe for kholodets — savory meat aspic! I recently visited friends and was served the most amazing kholodets, and I want to share how it's made. It comes together from just a few ingredients — beef shank, chicken feet, and vegetables — yet turns out wonderfully flavorful. I highly recommend giving it a try!

- Rinse and clean the chicken feet and beef shank. Trim the nails off the chicken feet. Put everything in a large pot, cover with cold water, and set it on the stove. As foam starts to form, skim it off with a slotted spoon. 2. Wash and peel the vegetables, then add them to the pot whole. Simmer for about five hours. Remove the shank and feet, strain the broth, season with salt to taste, and stir in the minced garlic. 3. Pick through the meat, then arrange the cleaned, chopped pieces in an aspic mold and pour the broth over them. Garnish nicely with herbs, sliced carrot, or hard-boiled egg. 4. Let it cool, then refrigerate until fully set. Enjoy!
