Pea Puree with Smoked Chicken

    1. To help the peas cook down better, soak them overnight. 2. Put them on the heat; once it comes to a boil, foam will form, so skim it off with a slotted spoon. Reduce the heat and cook for about another hour. 3. In vegetable oil (olive oil works too), sauté the smoked chicken and the onion. 4. Blend the peas into a puree with an immersion blender (or use a potato masher), then season with spices and salt. 5. Stir the smoked chicken and onion into the puree. Sprinkle with fresh parsley and serve!
