Green Beans with Egg and Cheese
Perfect for breakfast — tasty and good for you! You can also serve this as a side dish at dinner. Mix it up by adding browned ground meat or sautéed vegetables; green beans pair well with just about any vegetable or meat.

Boil the young green beans in salted water until tender.

Finely chop the onion and parsley and sauté them in vegetable oil until soft.

Cut the beans into roughly 1-inch (2–3 cm) pieces, combine them with the sautéed onion, and warm everything in a skillet with a little vegetable oil.

Beat the eggs and season with a little salt.

Pour the beaten eggs over the beans and stir constantly until the eggs set.

Keep the heat low throughout — that's what keeps the egg tender.

Grate the cheese on a fine grater and sprinkle it over the beans. Take the skillet off the heat, cover it, and let the cheese melt.
