Broccoli and Cheese Salad
Made from a handful of ingredients — very healthy and delicious! Broccoli and cheese salad is a great option as a snack on its own or as a side for potatoes or meat. It's quick and easy to make. Perfect for adding variety to your everyday menu!

Step 1:
How do you make a broccoli and brined-cheese salad? Get all the ingredients listed in the recipe ready. You can leave out the garlic or use just a little, if you like. Olive oil or refined vegetable oil both work.

Rinse the broccoli and break it into small, evenly sized florets. Peel the garlic.

Step 3:
Bring water to a boil in a small saucepan. Put the broccoli into the boiling water and leave it for 30–60 seconds. If your florets are very small, 30 seconds will be plenty. Don't leave the broccoli in the water too long, or it'll go soft. Tip the pieces into a colander and drain.

Step 4:
Put the florets in a small deep bowl and let them cool slightly. Drain the brine from the cheese. Break the cheese into small pieces by hand or cut it into small cubes with a knife. Add it to the broccoli.

Step 5:
Press the garlic through a garlic press and add it to the salad bowl. Add a pinch of ground black pepper or allspice and drizzle with oil. At this stage you can add your favorite seasonings and spices, such as dried basil, oregano, ground paprika, and so on.

Step 6:
Mix everything thoroughly and taste for salt. Add more if needed (I usually don't, since brined cheese is salty enough on its own).

If you like, sprinkle the salad with finely chopped herbs and serve.
