"Ryzhik" Carrot Salad with Sour Cream
A simple, quick-to-make salad appetizer! The main ingredient of "Ryzhik" salad is carrot, which is where it gets its name — "ryzhik" means "little red one," for the orange color. The carrot is nicely complemented by processed cheese and garlic, together making a zesty appetizer you can serve for lunch or on a holiday table.

Step 1:
Get the ingredients ready according to the list. The products needed for the salad are simple, affordable, and cheap. It's better to use fresh carrots — they're juicier and the salad will be tastier. Wash the carrots and peel them (if they're straight from the garden, you don't need to peel them — just scrub them with a stiff brush), then grate them on a coarse grater or a julienne (Korean-salad) grater.

Grate the processed cheese as well. To make it easier to grate, you can put it in the freezer for half an hour first.

Peel the garlic clove and put it through a fine grater or a garlic press, too. Anyone who likes salads spicier can add more garlic.

Put the prepared ingredients in a deep salad bowl. Add salt to taste, keeping in mind what you'll dress the salad with. If it's mayonnaise, you won't need much salt; if it's sour cream, you can use a bit more. I use sour cream.

Dress the salad and mix. Let it soak by putting it in the refrigerator for an hour. You can serve the salad in a large salad bowl or in small individual portions. It's a great accompaniment to a side of potatoes, pasta, or grains, or to a hot meat dish, and it also works as a standalone appetizer for a feast or alongside strong drinks. Enjoy!
