- Rinse the lemongrass and split it in half—save one half for serving. Rinse the asparagus and trim off the tough ends. 2. Cook the asparagus and half the lemongrass in boiling salted water with the lemon juice (about 12 minutes). 3. Lift the asparagus out of the broth. Cut off the tips and keep them in the warm broth to use as garnish later. 4. Measure out 200 ml of the broth and simmer the remaining asparagus and lemongrass in it for a few more minutes. 5. Mash everything into a purée, stir in the coconut milk and chopped chili, and season with salt. Reserve a little chili for serving. 6. Serve the soup garnished with the asparagus tips and lemongrass, sprinkled with chili and your favorite spices. Enjoy!
