Coffee in a Cezve on a Gas Stove

If the desert's a little too far away, make delicious coffee on a regular gas stove! I love coffee brewed in a cezve. Sure, you can do it in hot sand even at home, but that's too much trouble for me. I make my coffee on a plain old gas stove and it comes out wonderfully tasty. The key is following the right order of steps. The ingredient amounts here are for a small cezve (100 ml).

    1. If you like your coffee sweet, add the sugar to the cezve first. 2. Pour in the water—fill it up to the point where the neck starts to narrow. 3. Add the coffee. There's no need to stir it. 4. Coffee is best brewed over low heat, so set the cezve on a low flame. 5. The coffee will start to foam. When the foam rises and almost reaches the rim of the cezve, take it off the heat. Stir the coffee gently so the foam settles. 6. Repeat the process two more times. The last time, don't stir the foam—carefully spoon it into the cup. 7. Let the cezve with the finished coffee stand for half a minute so the grounds sink to the bottom. 8. Pour the coffee into the cup. Enjoy!
