Pickled Squid Tentacles

Absolutely scrumptious! Try seafood with a new recipe! I love seafood, and squid is my favorite of the bunch. I'm especially fond of the marinated version. The recipe is simple, and the squid... well, it's just finger-licking good!

  • Start by bringing a pot of water to a boil and dropping in the thawed squid. Once the water returns to a boil, cook them for another three minutes. Take the squid out, rinse it under cold water, and peel off the curled skins. Layer the squid in a jar, alternating it with coarsely sliced onion and garlic cloves cut into a few pieces. Add the bay leaf and peppercorns to the jar as well. Strain the water the squid cooked in, let it cool, and pour it into the jar. Add the salt, sugar, and acetic acid. Cover the jar with a lid and leave the squid for four hours, then drain the marinade. Pack the squid down, add more salt and sugar if needed along with the lemon juice, and pour the oil over the squid. In two or three hours they're ready to eat. Enjoy!
