Cooking method
1. Preparing the nut mixture: combine the chopped nuts, which must first be lightly fried in the oven, with sugar and flour.
2. Whisk the proteins, gradually adding sugar.
3. When the protein mass is ready, add the vanilla and nut mixture to it and mix, put it in baking pans lined with parchment.
4. Bake the cakes for 20 minutes at a temperature of 170 degrees, reduce to 150 degrees and dry in the oven for another 1 hour and 45 minutes. Now the cakes need to be allowed to stand for a day.
5. Preparing Charlotte cream. Mix the egg and sugar well in the container, pour in the heated milk and add more sugar. Mix well and pour the mass into the rest of the milk. Preheat, bring to a boil. Without ceasing to stir, keep on fire for 5 minutes, then cool.
6. After the cream cools down, put the soft butter and beat the mass with the addition of cognac and vanilla until fluffy. Divide the cream into two halves.
7. In one of the parts of the cream, add cocoa and mix.
8. Combine the cakes with white cream, and lubricate the top and sides with cocoa cream. Decorate the cake on top.
