Kyiv Cake with Walnuts
Treat yourself to a delicious cake with a tried-and-true recipe! Kyiv Cake was created by one of Kyiv's confectionery factories. It's a wonderful cake, and absolutely stunning when the pros make it. But you don't have to travel to Ukraine's capital to taste it—you can make this treat with your own hands. Kyiv Cake is usually made with cashews or hazelnuts, but I often swap in walnuts—and it's every bit as delicious.

- Make the nut mixture: lightly toast the chopped nuts in the oven first, then combine them with the sugar and flour. 2. Whip the egg whites, gradually adding the sugar. 3. Once the meringue is ready, fold in the vanilla and the nut mixture, then spread it into baking pans lined with parchment. 4. Bake the layers for 20 minutes at 340°F (170°C), then lower the heat to 300°F (150°C) and dry them in the oven for another 1 hour and 45 minutes. Let the layers rest for a full day. 5. Make the charlotte (custard) cream: whisk the egg with sugar in a bowl, pour in the warmed milk, and add more sugar. Mix well and pour the mixture into the rest of the milk. Heat it and bring to a boil. Keeping it on the heat and stirring constantly, cook for 5 minutes, then cool. 6. Once the cream has cooled, add the softened butter and beat the mixture with the cognac and vanilla until fluffy. Divide the cream in half. 7. Stir the cocoa into one half. 8. Sandwich the cake layers with the plain cream, then coat the top and sides with the cocoa cream. Decorate the cake on top. Your Kyiv Cake with walnuts is ready. Enjoy!
