Pork Ears for Beer
Make a savory beer snack and invite your friends over! A recipe for homemade smoked pork ears from my husband, who makes them himself for get-togethers with his buddies. Cooking the ears takes a few hours but requires absolutely no special skills or extra ingredients. Use whatever spices you like, to your own taste. Add a little imagination and your ears will be one of a kind!

- Before you make this pork-ear snack, clean the ears well and wash them thoroughly. Put the ears in a large pot, cover with water, and bring to a boil. Add a whole peeled onion, the crushed garlic (half of it—save the rest for smoking), bay leaf, ground black pepper and peppercorns, the soy sauce, and the dill. Cook over medium heat for 1 hour. Be sure to taste for salt and add more if needed. Once the time's up, turn off the heat and let the ears steep in the broth for two hours. Meanwhile, get the smoker ready. It's great to use fruit-tree branches—they give the snack a special aroma. Grease the grate with oil and lay on the ears, rubbed first with ground black pepper and crushed garlic. Smoke them for 30–40 minutes. Slice the cooled smoked ears into strips and serve with beer. Here's to good times with friends!
