    How do you make an arugula salad with cherry tomatoes and cheese? Get all the ingredients ready according to the list. Use young arugula (i.e., small leaves) for the salad — it has a milder taste than mature leaves. Tip it into a colander and hold it under cold running water. Then lay the leaves on paper towels and blot them on top to remove the excess water you don't want in the salad. Put the arugula in the salad bowl.

    Peel and rinse the onion. For vegetable salads I prefer red onion, shallot, or white onion. These varieties have a milder taste and pair well with fresh vegetables. Cut the onion into thin slivers. Wash, dry, and halve the cherry tomatoes. Add the onion and tomatoes to the arugula.

    Next comes the brined cheese. Cut it into small cubes or crumble it into small pieces by hand. Add it to the salad.

    Sprinkle with mild ground paprika and allspice, and add salt if needed. Bear in mind that brined cheese is salty, so you may not need any salt — I didn't add extra. Drizzle a little vegetable or olive oil over the top.

    Garnish the salad with fresh herbs. Dill, parsley, or green onion work well.

    Before serving, you can chill the salad in the refrigerator for a while. Then mix all the ingredients thoroughly.
