Vegetable Salad with Green Beans and Cherry Tomatoes

A tasty, vitamin-rich, bright vegetable salad! Green beans contain many beneficial substances. They're rich in dietary fiber, which is good for digestion. Beans are a source of plant protein, so they're ideal for anyone who doesn't eat meat.

    How do you make a vegetable salad with green beans? Get all the ingredients ready according to the list. For the salad, I used a green mix of various young leaves. You can use iceberg lettuce, batavia, corn salad, butterhead lettuce, or chard. For the onion, use red, shallot, or sweet white onion — these varieties have a milder taste and are ideal for light vegetable salads.

    Trim the ends off both sides of the beans and remove any strings along the sides. Cut each pod into pieces about 2 cm long. Rinse the beans in clean water.

    There are two ways to cook the pods. First: drop the beans into boiling water and cook until the pods are tender. Second: pour 2 tablespoons of neutral vegetable oil into a skillet, heat it, and sauté the beans with finely chopped garlic until tender. I prefer the second option, so I usually sauté the beans.

    Wash the lettuce leaves, lay them on paper towels, and gently blot them on all sides to remove the excess moisture. Put them in the salad bowl.

    Rinse and dry the cucumber and tomatoes. Cut the vegetables into small, irregular pieces. Add them to the salad mix.

    Peel the carrot and remove the core and seeds from the bell pepper. For a brighter, more appetizing finished dish, use peppers of different colors if you can. Cut the bell pepper into strips and grate the carrot on a coarse grater or with a julienne (Korean-salad) grater.

    Add the chopped onion and the green beans to everything else.

    Just the finishing touches left. Finely chop the herbs and add them to the salad. Season with salt and pepper to taste. If needed, add a little olive or vegetable oil (if you sautéed the beans, you may not need oil at this stage).

    Toss the salad and sprinkle it with lemon or lime juice.

    Done! Serve it as a dish on its own or as a side to meat, potatoes, fish, and much more.

  • Choose tomatoes that are juicy but firm. Soft ones don't hold their shape well — as you slice and assemble, they fall apart into a shapeless mush and spoil the look of the dish.
  • If the skin isn't tough, damaged, or bitter, there's no need to peel it off.
  • Since everyone's tolerance for salty, sweet, bitter, spicy, sour, and pungent flavors is different, always add spices and seasonings to your own taste! If you're using a seasoning for the first time, keep in mind that some spices are especially important not to overdo (chili pepper, for example).
