Red and Yellow Tomato Appetizer with Cheese and Garlic

A quick, pretty appetizer in just a few minutes. This appetizer will dress up any holiday table and takes hardly any time. And by adding different herbs, this tomato-and-cheese appetizer takes on new flavors. To keep them straight, we'll play up the contrast with different-colored tomatoes.

    Get all the ingredients ready for this tomato appetizer with cheese and garlic. From this lineup we'll make two versions that look very similar but taste completely different. So you can tell them apart on the holiday table, use red and yellow tomatoes. Plum tomatoes — fleshy and firm — are best. Wash and dry the herbs.

    Put the cream cheese in a bowl and stir it until smooth. For more spreadability, you can add a tablespoon of sour cream. Divide the cream cheese into two equal parts. Peel the garlic, mince it, and add it to each part of the cheese.

    Remove the tough part of the stem from the basil leaves and chop them finely. If you like, you can blend them to a purée. But we prefer it when the basil reveals its full flavor as you start eating. Salt everything and mix.

    Add finely chopped dill and green onion to the other part of the cream cheese. Salt everything and mix until the herbs are evenly distributed.

    Cut the stem ends off the tomatoes and slice them crosswise into rounds about 1–1.5 cm thick. Garnish the serving dish with dill and basil and arrange the tomato slices. You can do this in any order you like.

    Spoon the cheese mixture onto the tomato slices. Put the dill-and-green-onion cheese on the red slices and the basil cheese on the yellow ones. You can do this with a regular teaspoon, but it's better to put the mixture in a piping bag with a star tip — it's quick and looks pretty. Garnish the top with basil leaves and dill, and serve right away.

  • Choose tomatoes that are juicy but firm. Soft ones don't hold their shape well — as you slice and assemble, they fall apart into a shapeless mush, release their juice, and spoil the look of the dish.
