Potato gnocchi with basil

What is unusual to cook from potatoes? Of course, Italian gnocchi! Gnocchi is a traditional dish of Italians, which is very popular - especially with various delicious sauces. Now it is popular in our family :) This dish can act as a separate independent dish, or it can be an excellent side dish for meat or fish!

Thoroughly wash and dry the potatoes well. We pierce it in several places with a fork and bake it in a preheated oven at a temperature of about 190 degrees for 35-40 minutes. It is better to bake potatoes on a thin layer of salt. This will give it a special taste. When the potato is easily pierced with a knife, and its skin is slightly removed, it can be removed.

Peel the slightly cooled potatoes and grate them, preferably fine. Then add the egg yolk, chopped basil, flour to it. Salt and pepper to taste.

The resulting dough is gently kneaded, gradually adding flour until it ceases to be sticky. Now you need to divide the dough into several pieces and roll a sausage out of each. Cut the sausages into small pieces. Each piece is slightly pressed down with a fork, forming classic gnocchi.

We lower the gnocchi into salted boiling water and cook until they float to the surface. Potato gnocchi are cooked! We prepare the sauce, for which we melt the butter in a frying pan, put a few basil leaves in it, spread the dumplings and warm them for a few minutes.

Grate lemon zest and hard cheese. Sprinkle them on the finished dish, laid out in serving plates, pour the remains of the sauce from the pan on top, decorate with fresh basil.
