Summer vegetarian salad with mash

Prepare a bright summer salad in the middle of winter and enjoy the taste! I have a principle - every day I try to make a salad, mainly from fresh vegetables and fruits. I love salads with avocado, however, there is a problem - they are always sold unripe in local stores. "You can also ripen them at home, for which I use a paper bag: I put an avocado and a banana in it. A couple of days - and the avocado is ready to be added to the salad.

Cooking method

Cooking time: 45 min

1. Boil the beans according to the instructions on the package (usually the mash is cooked for 30 minutes on low heat). If it is necessary to soak for a while before cooking, soak it. Corn also needs to be boiled until ready.

2. Chop red onion into cubes. And cherry tomatoes are cut in half lengthwise.

3. Cut the avocado into cubes, separate the corn kernels from the cobs.

4. Combine all the prepared ingredients in a suitable bowl.

5. We fill the salad with liquid ingredients, namely: lemon juice, apple cider vinegar or cider and olive oil.

6. Salt, pepper and mix everything very well.
