- Rinse the rice until the water runs completely clear. 2. Put it in a saucepan, add the water, and set over medium heat. 3. Bring to a boil, stirring constantly, and cook until the water is almost fully absorbed. 4. Add a little goat's milk, bring back to a boil, then lower the heat. 5. As the porridge thickens, pour in more milk, adding it in small amounts as the rice absorbs it. Don't forget to stir. At this stage, add the salt and sugar, plus the vanilla extract (go easy — you just want a light hint of flavor). 6. Pour the remaining milk into the thickened porridge, bring to a boil, then turn off the heat. Cover the pan and let the porridge rest for 10 minutes. 7.
