- Wash and dry the apples, cut out the cores, and slice them into wedges about 1/4 inch (5–8 mm) thick. Take a 1.5-quart pot and layer the apples in it, sprinkling each layer with sugar. Leave them for 12 hours to release their juice. Then bring the jam to a boil, lower the heat, and cook for 5 minutes — try not to stir, but instead just press the apple slices down into the syrup with a spoon so they stay submerged and hold their shape. Take the pot off the stove, cover it with a towel, and leave it for 12 hours. Repeat the cooking the same way — bring to a boil, cook 5 minutes — and leave it another 12 hours. Finally, cook the jam for 10–15 minutes. Seal it into jars while hot.
