Fruit-Peel Compote
A delicious, refreshing drink — just the thing on hot summer days! I came up with this compote by accident. I bought some plums today, and since I don't eat the skins, I peeled them — and instead of tossing the peels, I figured I'd drop them into some water and boil them to see what happened. I made it with a cup of water and didn't expect such a lovely flavor! I didn't add sugar, so it came out quite tart; I liked it, though you can't drink a lot of it that way. Then I added some apple peels — sweet white-transparent apples — figuring they'd balance the tartness, and they did: even without sugar it turned out pretty sweet. In the heat, sugar-free is just the ticket!

This is a recipe made from scraps rather than groceries, so to speak. Peel the plums.

Then peel the apples. It's best to use sweet apples to balance the tartness of the plums, but if the plums are sweet, you can use tarter apples — it all comes down to the flavor of the two fruits.

Boil a little more than a quart of water, since the peels will simmer for about 30 minutes and some water will boil off. First bring the water to a boil, drop in the peels, lower the heat to low-medium, and let it simmer for about 30 minutes.

And there's your pretty reddish compote. Add sugar, vanilla, cloves, or cinnamon if you like. Cinnamon works especially well in this compote — but really, it's all up to your taste.
