Spinach Spread with Cottage Cheese and Matsoni — "Green Gathering"
This refreshing spring appetizer will win over everyone at the table! I like to sort my get-togethers by color, and this one is green — a sign of new beginnings! I've already mastered making matsoni (a Caucasian cultured-milk drink) and homemade cottage cheese, and this spring I decided to invite plenty of new encounters from fate, so I dressed my breakfast in green. Here's a cottage-cheese spread with spinach and matsoni — I'm sure it lifts the spirits and sparks a zest for life, because spinach carries living energy and matsoni amplifies it!
Cooking method

Step 1:
Mash the homemade cottage cheese with a fork.

Sort and wash the spinach.

Pour boiling water over the spinach and boil it in salted water for a minute.

Drain the spinach well — even squeeze it — so there's no excess liquid, then add the garlic pressed through a press.

Blend this spinach-and-garlic mixture in a blender.

Get the matsoni ready.

Combine the spinach mixture, cottage cheese, and matsoni and blend together.

Taste and add salt, and any spices you like.
