    Boil the cauliflower in boiling water for 4–5 minutes. Drain and let it cool slightly.

    Cut off the florets.

    Grate the cheese on a fine grater and finely chop the garlic.

    In a bowl, mix the flour, kefir, and eggs into a smooth batter.

    Add the garlic, cheese, salt, and pepper.

    Finely chop the herbs and stir them into the batter until evenly combined.

    Chop the cauliflower — but not too fine; you don't need to purée it :) I pulsed mine in a food processor.

    Mix well. If the batter is too thin, add a little flour, but don't overdo it (I added 1 tbsp). At the very end, add baking soda and mix well. The soda is entirely optional — without it you get tasty fritters with a crisp crust, like potato pancakes, and with it you get light, fluffy ones, so choose to your taste.

    Fry the fritters in vegetable oil for a couple of minutes per side.
