Oatmeal with Caramelized Apples and Almonds

Tired of the same old oatmeal for breakfast? Then dress it up in a new way!!! This kind of porridge makes a wonderful start to the day — fragrant and creamy. I like to cook oats in a mix of water and milk (that's how I do any milk porridge), but you can use all water or all milk. I don't add sugar to the oatmeal itself — the apples and almonds make it plenty sweet. You can make the sweet sliced almonds ahead of time to save even more time. Skip the cinnamon if you don't like it, or swap it for vanilla sugar. But personally, I just adore the apple-and-cinnamon combo :)

    Let's start with the sweet sliced almonds. Preheat the oven to 350°F (180°C).

    Tip the sliced almonds into a sieve and dampen them under running water (this helps the powdered sugar stick). Let the excess water drain off.

    Sprinkle the almonds with powdered sugar and shake well so they're evenly coated.

    Spread them out on a baking sheet. Bake in the preheated oven for about 10 minutes — the almonds should turn lightly golden. Keep an eye on them, since ovens vary; it may take less time, and you don't want them to burn!

    While the almonds bake, let's make our base.

    Pour the rolled oats into a saucepan and cover with water. Bring to a boil.

    Meanwhile, the almonds are done. They've fused into one solid sheet.

    Just break it into pieces.

    As soon as the oats come to a boil, add the milk, bring back to a boil, turn off the heat, and let it sit for about 10 minutes.

    So, the almonds are ready and the oatmeal is on the stove — that leaves the apples. Peel them, cut them up (I cut mine fairly large), and sprinkle with lemon juice.

    Melt the butter in a skillet, add the apples, sprinkle them with sugar and cinnamon, and cook gently. The time depends on the size of the pieces and how soft you want them — I cook mine 2–3 minutes.

    Everything's ready; now just assemble. Spoon the oatmeal onto a plate, top with the caramelized apples, and sprinkle with the sweet sliced almonds. Enjoy, and have a great day!
