- Mix the milk with the water and bring to a boil. Add a bunch of dill — don't untie it. Or stir in dried dill; that works well too. Add the salt and spices. Stir well and drop in the shrimp. Boil for 3–5 minutes. Lift them out of the milk onto a platter and squeeze lemon juice over them. This amount of liquid can poach several kilos of shrimp.
