- Here's a fun way to add a "sausage" to your table that's completely meat-free — perfect for plant-based eating and a great choice if you're watching your weight. Start by cooking the beet ahead of time: scrub it well, cover with water, and bring to a boil. Once it boils, lower the heat and simmer for 30 minutes. Drain, cover the beet with cold water, put a lid on, and let it cool completely. Take dry peas (I used yellow split peas) and toast them in a dry skillet, stirring like you would roasting seeds. Grind the toasted peas in a coffee grinder, then sift if you can — I skipped sifting and the mixture came out a bit coarse, but that actually gave it a pleasant nutty bite. Bring about 150 ml (2/3 cup) of water to a boil in a saucepan, then pour in the remaining cold water. Whisk in the pea flour, stirring constantly. Set it over the heat, bring to a boil, then reduce to the lowest setting and cook for 20–30 minutes until it reaches a thick purée — keep stirring the whole time, since the peas settle and can scorch. Blend the garlic, pepper, nutmeg, and oil together. Combine the pea purée with the garlic mixture and blend until smooth, gradually adding beet juice until it takes on a natural, sausage-pink color. Take a plastic bottle (it must be perfectly straight, with no taper, or you won't be able to slide the sausage out), cut off the top, and pack in the mixture. Set the bottle in cold water to cool it down quickly, then refrigerate overnight so it firms up. In the morning, just flip the bottle over and the sausage slides right out. I couldn't wait and cut mine early, so in the photo it looks a little crumbly, but the flavor was just as good. It comes out tasty and filling. I made the vegan version — if you'd like, you can fold in a little salted bacon or ham. Enjoy!
