Step 1:
- Lay the washed spinach leaves on the bottom of a bowl, then add the rest of the ingredients one by one as you prep them: cut the pink and yellow tomatoes into medium cubes, cut the cucumbers into medium cubes, slice the bell pepper (green and red) into strips, and cut the red onion into thin half-rings.

- Once all the ingredients are in the bowl, add sugar, salt, and pepper to taste, along with 2 tablespoons of balsamic vinegar and 2 tablespoons of extra-virgin olive oil.

- If you happen to buy an unripe avocado, just leave it at room temperature for 2-4 days and it will ripen; in the refrigerator, an unripe avocado may simply spoil during long storage. To speed up ripening, you can wrap the avocado in paper and keep it at 25-27°C. Storing avocados together with bananas also helps them ripen faster. Avocados are usually prepared like this: cut lengthwise in half and remove the pit. The pit of a ripe avocado comes out easily — just gently pry it loose from all sides with a knife. To get the flesh out of the halves, you can use a spoon, or peel each half with a knife. Then the avocado flesh is either mashed into a creamy paste or cut into cubes, depending on the recipe. It's worth noting that avocado flesh, like apple, starts to darken when exposed to air. To prevent this, you can sprinkle the flesh with lemon juice. Avocado can be eaten raw, like any other fruit; you can spread it on bread, sprinkle a little salt, and eat it as an open sandwich.
