    To make this salad, the first step is to prepare the celery stalks. Separate them from the main bunch and wash them thoroughly under running water — there's often grit inside the groove of the stalk. Cut three centimeters off the thick end of each stalk; you won't need that part.

    Trim the cut ends on the opposite side of the celery stalks too. If you like, you can free the stalks of the tough lengthwise strings embedded in the flesh. They're visible on the cut, but they never bother me.

    Cut the celery into medium-thick pieces. Transfer it to a bowl. Cutting the celery this way makes the salad especially crisp.

    Shell the walnuts and cut them into medium-sized pieces. You can cut them smaller, but I like the texture of the nut to be clearly visible in the salad.

    In a gravy boat, mix the olive oil and lemon juice. Add the whole-grain mustard. I love it, so I always add plenty — go by your own taste.

    Wash the apple and cut it into cubes. Put all the prepared ingredients in a bowl, add salt to taste, and toss with the dressing. Before serving, garnish the salad with fresh herbs and pomegranate seeds.

  • The salad is very juicy, crisp, and incredibly rich in vitamins and other nutrients. It'll help anyone watching their figure get in shape. And it makes a great accompaniment to white or red meat or fish. Don't peel the apple — the skin adds bright color and makes the salad even more appetizing. However, if the skin is coated with a special wax, it's better to remove it. For looks I used a red apple, but any will do — yellow or green. The one thing I recommend is working with the apples at the very end of making the salad, since cut apple darkens quickly and loses its appeal. Enjoy!
