Cooking method

  1. Step 1:

    Step 1

Get all the ingredients you need to make the layered Roman cake ready. Make homemade crepes ahead of time using your favorite recipe, but it's better to make them a little thicker rather than super-thin and lacy, so the cake doesn't turn out too flat and cloyingly sweet. You'll also need condensed milk and walnuts to make the cake.

  2. Step 2:

    Step 2

If the walnuts are raw, first toast them in a dry skillet, and only then grind them fairly finely in a blender or with a meat grinder. When buying nuts, choose good-quality kernels so they don't taste bitter later.

  3. Step 3:

    Step 3

Place the first crepe on a flat dish, spread it with condensed milk, and sprinkle with chopped nuts, distributing them evenly over the whole crepe.

  4. Step 4:

    Step 4

Lay down another crepe and repeat the same process with condensed milk and chopped nuts. Keep assembling the cake this way, alternating layers of crepes, condensed milk, and nuts until you run out of crepes.

  5. Step 5:

    Step 5

When the cake is fully assembled, put it in the refrigerator for a couple of hours so all the crepe layers soak up the condensed milk.

  • In this recipe, you can replace regular condensed milk with dulce de leche (boiled condensed milk), which gives the cake a very pleasant caramel flavor. It's even tastier if you cook the condensed milk at home yourself, but store-bought works too. And you can swap the walnuts for hazelnuts or other tree nuts. You can also experiment with the homemade crepes. You could replace them with layers of unsweetened puff pastry, which would make a more airy dessert. Pay special attention to the quality of the condensed milk. Never use low-quality condensed milk made with added vegetable fats. Such a product is far inferior in taste to real whole sweetened condensed milk.
