  • You can use any variety of plum for this paste. Here we use yellow plums. Wash the plums, pit them, and put them in a saucepan. Cover with granulated sugar and leave for a day. Over those 24 hours, the fragrant plums will release all their juice, so you won't need a drop of water to cook it down. Set the pan over high heat, bring to a boil, and cook for 20–30 minutes, stirring often. After half an hour, let the mixture cool a little. If you love spices, add a pinch of cinnamon for extra interest. Then press the whole mixture through a colander or blend it in a food processor (a purée attachment works best). Your plum paste is ready. Enjoy!
