Apple Juice for Winter
A wonderful alternative to store-bought juice — and so good for you! This canned apple juice is a real treasure trove of vitamins for the winter. What I love about this recipe is how easy it is to make. It uses just a couple of ingredients, which keeps the juice both wholesome and tasty.

- First, wash the apples thoroughly. Cut them into quarters (you don't need to remove the cores). Now make the juice — you'll need a juicer. Press the juice into a deep container, straining it through a fine sieve or cheesecloth so you end up with a lighter, prettier juice. Then move on to cooking: pour the juice into a large pot and set it over the heat. As you bring it to a boil, any pulp left after straining will rise to the top, so you can easily skim it off with a spoon or ladle. Once the juice boils, cook it for another 10 minutes. Note that this recipe doesn't really call for sugar — but if your apples aren't very sweet, you can sweeten the juice to taste. Then quickly pour the juice into pre-sterilized jars and seal the lids. Wrap the jars of nearly-finished apple juice in a towel until they cool completely. Store the apple juice in a cool, dark place.
