Cooking method
- Before you start, make sure the berries are washed. If the cranberries and lingonberries aren't fresh but were bought frozen, let them thaw for about half an hour (assuming a normal room temperature). Pass all the berries through a metal colander or sieve. You'll get a lot of juice—set it aside for now, you won't need it yet. Put the berry pulp straight into a pot of water. Before you do, make sure you've got the berry-to-water ratio right: about 1 liter (4 cups) of water per cup of berries. Simmer the pulp for 20 minutes. Strain the liquid from the pulp through the same colander, pressing the pulp to squeeze out the last of its juices, then discard it. Scoop out a cupful of the berry liquid and set it aside. Return the rest to the stove and bring it to a boil. Stir in the sugar. Near the end, once the liquid is boiling, pour in the juice you collected at the very start. Now for the starch: measure 1 tablespoon of starch per liter of liquid. Before adding it, stir it into the cup of liquid you set aside. After adding the starch, boil everything for about 5 more minutes. Taste and enjoy!
